Follow along step-by-step.
Cut the vegetables into long, even batons and cook with turmeric, salt and very little water.
Grind coconut, cumin and green chilli coarsely.
Fold the coconut paste into the tender vegetables and cook for a few minutes.
Turn off the heat, stir in yogurt, curry leaves and coconut oil, and rest covered.
