Keep scraping the creamy layer from the sides back into the milk as it reduces.
When the volume has reduced noticeably, add sugar, saffron and cardamom.
Simmer a few minutes more, cool and chill; garnish with sliced nuts.
Notes & Tips
Frequent scraping gives basundi its lovely little strands of malai. Nutrition values are approximate per serving.
