Soak and pressure-cook chickpeas until tender, then simmer with a well-cooked tomato-spice masala.
Mix flour, semolina, yogurt, baking powder, salt and a little oil into a soft dough; rest several hours.
Divide and roll bhature into medium rounds.
Deep-fry one at a time in hot oil, pressing lightly so each puffs, and serve immediately with chole.
Notes & Tips
For lighter bhature, let the dough rest properly rather than making it stiff. Nutrition values are approximate per serving.
