Follow along step-by-step.
Soak chickpeas overnight and pressure-cook with salt and a tea bag until tender; discard the tea bag.
Cook onion and ginger until browned, then add tomatoes and chole masala and cook thoroughly.
Add chickpeas with some cooking liquid and simmer until the gravy clings to them.
Finish with amchur and coriander; rest 10 minutes before serving.
Notes & Tips
The short resting time after cooking helps the masala settle into the chickpeas. Nutrition values are approximate per serving.
