Wash all the vegetables thoroughly. Cut the tofu into medium-sized cubes. Cut the eggplant into small bite-sized pieces. Slice the bell pepper. Cut the broccoli into small florets. Keep all the ingredients ready before starting the curry.
Place a large pan or wok over medium heat. Add vegetable oil. Allow the oil to become hot.
