Pressure-cook toor dal and whisk smooth with water, tomato, tamarind, jaggery and spices.
Knead flour with turmeric, chilli, salt and a little oil; rest 15 minutes.
Roll the dough thin, cut into diamond-shaped strips and drop them into gently boiling dal one batch at a time.
Simmer until the dhokli is cooked through, then finish with a mustard-curry leaf tempering.
Notes & Tips
Keep extra hot water nearby; the wheat strips continue to thicken the dal. Nutrition values are approximate per serving.
