Knead a soft whole-wheat dough and let it rest.
Grate cauliflower finely, squeeze out excess moisture and mix with ginger, chilli, coriander and spices.
Stuff the mixture inside dough portions and roll carefully with light pressure.
Cook with ghee on a hot tawa until crisp spots appear on both sides.
Salt the cauliflower filling only just before stuffing so it does not release too much water. Nutrition values are approximate per serving.
