Rinse poha briefly in a colander and let it stand until soft but not soggy.
Temper mustard, peanuts and green chilli, then cook onion until translucent.
Add turmeric and salt, followed by the softened poha; toss gently and steam for 2 minutes.
Turn off the heat and add lemon juice and coriander.
Do not soak poha in a bowl of water; a quick rinse is enough. Nutrition values are approximate per serving.
