Green gram crepes blended with ginger and chilli, crisp outside and tender within.
Pesarattu is a familiar breakfast built around green gram crepes blended with ginger and chilli, crisp outside and tender within. It is filling without feeling heavy and tastes best straight from the pan or steamer.
Follow along step-by-step.
Soak green gram and rice for 4 hours, then drain.
Blend with ginger, green chilli, cumin, salt and enough water to make a spreadable batter.
Pour and spread on a hot tawa, then scatter finely chopped onion and coriander on top.
Drizzle oil, cook until crisp, fold and serve with ginger chutney.
Use the batter the same day for the freshest green gram flavour. Nutrition values are approximate per serving.
