Puffed whole-wheat pooris served with a soft, turmeric-yellow potato bhaji. That makes Poori Bhaji a breakfast worth learning because the same method works well for everyday cooking.
Follow along step-by-step.
Knead flour with salt and just enough water into a firm dough; rest 15 minutes.
Cook mustard, cumin, onion and chilli, then add boiled potatoes, turmeric, salt and a little water for the bhaji.
Roll small dough balls into even rounds without using much dry flour.
Deep-fry in hot oil, pressing gently with a slotted spoon until each poori puffs.
A firm dough and properly hot oil help pooris puff without absorbing too much oil. Nutrition values are approximate per serving.
