Rinse basmati rice until the water runs mostly clear and soak for 20 minutes.
Warm ghee, bloom cumin and whole spices, then sauté onion until lightly golden.
Add vegetables and drained rice; stir gently for a minute.
Add measured hot water and salt, cover and cook on low until the rice is fluffy and tender.
Notes & Tips
Let the pulao rest covered for 8 minutes before fluffing with a fork. Nutrition values are approximate per serving.
